[May's Edo Side Dishes]

Menu Name: Simmered Bamboo Shoots in Tosa Style

<Explanation of the Dish>
Tosa-ni is a simmered dish from Kochi Prefecture (Tosa Domain) made by adding locally produced dried bonito flakes and eating it as is. Since the Tosa Domain's secondary residence was located near our hotel, we chose "Bamboo Shoot Tosa-ni." In Edo, Tosa-ni was commonly made by simmering it together with "konnyaku," which was popular among common people.

 

"Takenoko" (bamboo shoot) is said to mean "children grow up quickly and straight toward the sky" and also carries the wish for "future success and promotion."

Inspired by the fast-growing "bamboo shoots," it is said to carry the wish to "also grow the family's fortune." Since "bamboo shoots" are considered a lucky food, they are used in various spring to early summer dishes, not only in Tosa-ni, but also in simmered dishes and stews.
